Waffling Around

The best small-serving waffle recipe around

I, like many others, LOVE waffles. In fact, it’s more common for me to eat waffles than not on an average day. There’s so much you can do with them. Syrup, jam, peanut butter, lemon curd, plain, buttered, made into sandwiches, I could go on and on. “But Sam!” you might cry, “What makes your waffles so good?” Well simply, it’s my quick, easy but absolutely delicious recipe.

The recipe is modified from off of Quick and Easy Waffles from the cookbook How to Cook Everything by Mark Bittman.

Ingredients:

1 cup of flour
½ teaspoon salt
1 tablespoon salt
1½ teaspoons baking powder
¾ cup milk
1 egg
2 tablespoons butter (melted)*
½ teaspoon vanilla extract (optional)
Takes Roughly 15 minutes
Makes 2 waffles

Directions:

  1. Brush both sides of the waffle iron with vegetable oil (note: you can plug in the waffle iron now, but depending on your machine, you might want to wait)

  2. Combine dry ingredients in a large bowl and wet ingredients in a different smaller bowl.

  3. Pour wet ingredients into the dry ingredients; gently stir until no flour is visible.

  4. Pour about half of the batter into your waffle iron, and spread the batter to the edges of the tray.

  5. Close the lid and wait. (warning: opening the waffle iron while cooking releases heat and causes undercooked waffles, making them harder to get out)

  6. Once your waffle is done, use a fork to lift up the waffle and remove it from the waffle iron.

  7. Repeat for your second waffle

Have trouble removing your waffle from the waffle iron? It’s likely that the pan wasn’t hot enough or there wasn’t enough oil on the waffle iron. Use a butter knife to peel the waffle up starting around the edges.

* Butter note: Butter can be melted using a stove or microwave. If not given proper time to cool, the butter will refreeze when coming in contact with the cold milk and eggs. The refrozen butter looks a little weird but ultimately does not affect the quality of taste of the waffle
